Way back in January I went to EatandEvolve and sampled their wonderful chicken and waffles entree. Since then I’ve been doing a little mini-tour within the chicken tour of different restaurants spin on chicken and waffles. Last week I stopped by W.E. Sullivan’s for my friend John Ingles (of Smiley Graphix) retirement party.
I glanced at the menu and couldn’t believe that I haven’t included their Spicy Chicken & Waffle Sandwich on this mini chicken and waffle tour! After all it was the second place winner in our sandwich round up that happened almost two years ago to this date!
Well, it’s time to add that award-winning sandwich to this 13 months of chicken list, let’s get the cluck over to W.E. Sullivan’s!
And just like a 3-D piece of magical trickery, here we are at W.E. Sullivan’s!
Lots of people are eating out on the front patio area, but we’ll go inside. Normally I’d grab a seat at the bar, but we have special guest stars tonight, so we’ll wait to be seated at a table.
We didn’t have to wait long, there’s Kaylee flashing a pretty smile and she’s going to take us to our table and then you can meet tonight’s special guest stars on this 34th week of chicken!
We went to the room opposite the main bar and promptly took our seats.
And there’s this week’s special guest stars, my friends and frequent guests here on MIBP, Amber and Joe! They’re looking great and it’s always fun to have them along!
I found the Spicy Chicken & Waffle Sandwich on the menu and Amber and Joe have decided on a sandwich too. Kaylee took the order and now let’s take a little look around inside of here while dinner is being prepared.
Here’s a shot from the back of the dining room and the fully stocked bar back here.
Moving to the front area, there’s gaming machines and the stage where live music happens in here. I love the Sullivans sign from nights gone by in downtown Peoria.
As you can see, there’s a nice selection of beers on tap and Amber even has her own handle! (third from left.) I wonder how she swung that deal?
These two pretty ladies were seated at a table opposite the bar and I love the pose she struck for the MBIP Camera!
Meanwhile, back at our table, the appetizer has arrived!
We split an order of Billy’s Boxtys. These are a spin on potato skins taken to a whole new level! They’re potato cakes topped with melted Irish cheddar cheese, corned beef bacon crumbles and Guinness sour cream.
These could be a meal unto themselves and they are such a unique taste treat, we all loved them!
Now it’s time for the main courses! Amber and Joe split a Salmon BLT sandwich.
This is quite an original sandwich, it’s a seafood version of a BLT sandwich with a salmon filet being the central part of the sandwich along with tomatoes, Applewood smoked bacon slices and an herb aioli on toasted French bread.
Both Amber and Joe raved about the sandwich and I have to try that in the future, it looks so tasty!
And now on to the star of this clucked up post, the Spicy Chicken & Waffle Sandwich!
This is one of my favorite sandwiches in town and there’s nothing like it anywhere else, so if you want to sample it, you have to come to W.E. Sullivan’s!
The sandwich consists of a deep fried buttermilk marinated chicken breast that’s topped with melted Sriacha Jack Cheese, lettuce, chopped tomato and Sriacha mayonnaise. It’s housed inside of two homemade maple bacon waffles.
I’ve had it before and this is one flavor-packed sandwich, let’s dig into it!
Oh my god, it’s even better than I remember it! The chicken has a crispy batter and it’s juicy inside and the spicy cheese and mayo compliments the slightly sweet waffle so nicely! This is such a taste treat and one of the best chicken sandwiches ever!
If you haven’t tried it, I suggest you get the cluck over to W.E. Sullivan’s and try it out as soon as you can!
As we were finishing up, the friendly owners of W.E. Sullivan’s, Billy and Lauren Blasek stopped by and said hi! Always great to see both of them and I wish them continued success with their wonderful bar and restaurant!
It seems like only yesterday I was taking a first look at this place, but it’s going on three years now! I’m happy to see W.E. Sullivan’s becoming an Irish Institution here in Peoria, Illinois!
After dinner, the three of us walked over to the Navy-Marine Club. I love this place and it has a nice clubhouse feel to it inside and everyone always makes you feel welcome in here. I ran into my friend Colleen (bottom photo, to the far right) and she introduced me to a couple of her friends at the bar.
There’s a Daily Drawing here and a table that’s always got free snacks on it! Who doesn’t love free snacks?
You don’t have to be a member to hang out here, but you really should because it helps keep the place in business.
I joined up back in 2015 and it’s time for me to renew my membership here. Bartender Mark gave me the paperwork, I paid a small fee and—baboom—there he is presenting me with my brand new membership card!
Thanks Mark and thanks to Amber and Joe for driving and hanging out for the evening! It was a blast, as always!

Four Dixie Chickens—The Spicy Chicken & Waffle Sandwich at W.E. Sullivan’s is definitely one of the more delicious and tasty takes on chicken and waffles in Peoria and beyond!
