Every time I think I’m done with the chicken and waffles mini tour within this tour, I find yet another intriguing chicken and waffles dish and have to try it. Such is the case this week!
I saw that Prospect on Tavern has chicken and waffles sliders on their menu! Well, that sounds amazing!
Let’s get the cluck over there and try these out for our 32nd motherclucking week of chicken!
Here we are at Tavern On Prospect in Junction City. In the last few years Junction City has really become a hot spot again, due to the new influx of shops, services, restaurants and of course, Tavern On Prospect! Let’s go inside and see what’s happening.
Plenty of seats at their sturdy and impressive wooden bar, let’s go snag one and take a look at the menu.
Their slider selection is probably the most unique one in town. The sliders come in trios and you can choose from a Steak Burger Slider, a Salmon Slider and the one I’m here for tonight: The Chicken & Waffle Biscuit Slider!
Speaking of trios, check out the three beautiful women behind the bar! From left that’s Kelsey, Betsy and Kate and they’re as friendly as they are pretty! I may never leave!
I placed my order and they got me an ice-cold bottle of Budweiser. I love it in here!
As you can see, this is an extremely well-stocked bar and they have a great selection of craft cocktails, wine and beer. The first row of bottles are all choices of beer you have, there’s something for everyone in here!
At the end of the bar are the nine beers on tap.
There’s tables lined up against the wall opposite the wall along with a banner that stretches across the entire wall that says, “Prohibition” and goes along nicely with the Roaring 20’s theme of the bar.
Up at the front is a comfortable lounge area with chairs, tables and a large banquette sofa.
The windows have a pleasant view of Junction City and Prospect Road, the road that the tavern is named for.
Three state-of-the-art gaming machines are discreetly located in the bank if you’re in the gambling mood!
I love these photos of 1920’s celebrities, sports figures and gangsters. How many can you name?
Meanwhile, back at the bar…
Kate is presenting the sliders and they look fabulous! I got three of the Chicken & Waffle Biscuit Sliders and owner Ken comped me a Salmon Slider, because he said I had to try it and he didn’t have to twist my arm!
Let’s dig in!
There’s a piece of deep-fried chicken in the middle of a homemade waffle-styled biscuit and it’s been drizzled with honey sriracha sauce. I took a bite and this is amazing! So much flavor and texture in a little slider! The biscuit is crispy on the outside and flaky inside, the chicken is nice and savory and the honey sriracha sauce takes it to such a tasty and sweet level!
This is definitely the most unique presentations of chicken and waffles in Peoria and you need to try it as soon as you can!
Now it’s time to sample the Salmon Slider.
This is a nice piece of pan-seared glazed salmon filet garnished with spring mix, lemon garlic aioli, a cucumber slice and green onion and it’s housed in a mini brioch bun.
Wow, this is also such a tasty treat in a small package! The salmon is so flavorful and the garnish sauces and cucumber compliment it perfectly!

I decided to try one of their signature cocktails for dessert and Kate suggested I try one with the inviting name of, “Giggle Water,” and Betsy stepped up to make this intriguing sounding drink!
Here she is mixing up the cocktail, there’s a lot of components to this Giggle Water! Okay time to try it and see if it lives up to its name!
As you can see it turned me into a giggling fool after just one sip…oh wait, I was a giggling fool way before I ever stepped foot inside of Tavern On Prospect, but the drink is still delicious!

Four Dixie Chickens—These little sandwiches are packed with flavor and it’s definitely an original and delicious take on chicken and waffles!
They’re open for lunch and dinner, so you have no excuse not to stop in and treat yourself to a trio of these tasty delights! Cluck yeah!
