Last week my friend Michelle suggested via Twitter that I make biscuit chicken pot pies for this week’s Marty Meal, here’s the suggestion:
Well, Michelle, you’re in luck because we do take requests here on MBIP and so this week I’m going to take your suggestion all the way from Twitter to the MBIP World Headquarters Kitchen and Tasting Area!
So let’s get cooking!
This week’s ingredients are from left: President Pub Cheese, Ott’s Original Wing Sauce, Schnucks Mushrooms, Perdue Ground Chicken Breast, Schnucks Cream Cheese, Pillsbury Grand Biscuits, Tillamook Sharp Cheddar Cheese Shreds, Cholula Hot Sauce and Broccoli Cole Slaw.
Plus I’ll be using some ingredients already in the MBIP World Headquarters Kitchen.
The Night Before
I’ve never marinated ground chicken before, so this is a first!
There’s the ingredients for the marinade and they are: Sweet Baby Ray’s Chicken Wing Sauce, Cholula Hot Sauce, Ott’s Original Wing Sauce, Mustard Powder, Onion Flakes and Black Pepper.
And the most important ingredient: A Bud Light tallboy!
I mixed them all up in a bowl and as an afterthought I added a dollop of honey for a little sweetness. Then I poured it over the ground chicken and we’ll let that marinate overnight.
Now let’s really get cooking! Cheers!
The Next Day
We’ll let the chicken warm up to room temperature and while we’re waiting for that to happen…
Time for another Bud Light tallboy break! Cheers once again!
Now we’ll put the marinated ground chicken in the pan on high heat.
Once it’s cooked, we’ll drain the excess grease and marinade off of it. I’m going to let that sit and drain for a few minutes.
Next I’m seasoning the mushrooms with maple seasoning, black pepper and a healthy squirt of Sweet ’n Spicy Sandwich Pal Mustard.
Then we’ll combine the mushrooms and chicken in the pan and stir them up.
I’m going to add ingredients to boost the flavor up and these ingredients are: The President Pub Cheese, Schnucks Cream Cheese, about a quarter of the bag of the Tillamook Sharp Cheddar Cheese Shreds, hot sauce, black pepper and some of the Ott’s wing sauce.
I tasted it and it’s really delicious. The cheese flavors are creamy and rich and the hot and wing sauce have given it some heat and buffalo wing flavor.
We’ll let this simmer on low and let the flavors cook together.
Next we’ll take three of the Pillsbury Grand Biscuits and smoosh them out like little pancakes. And yes, smoosh is a genuine cooking term!
I also made a mixture of smashed Cheez-It crackers and bread crumbs to add to the chicken to bind it and make the consistency more of a filling type mixture.
It is so tasty you could just eat it like this, but we’re making mini pot pies today, so let’s keep moving along here!
We’ll put the biscuits into this muffin pan and stuff them with the buffalo chicken mixture. Then I folded the biscuits over the top and added a sprinkling of the cheddar cheese shreds and popped them into a pre-heated 375 degree oven.
While those are baking, I made the side dish which is a pre-packaged broccoli Cole Slaw. I dressed it with Newman’s Own Light Balsamic Vinaigrette and it’s good to go. Nice and simple!
After about 25 minutes the mini pot pies are all done and they look and smell absolutely divine!
Time to plate up this week’s Marty Meal!
I was afraid I’d have trouble getting the mini pies out of the muffin pan, but they slid right out and I love how they’re so self-contained!
They look beautiful and I almost hate to cut into them, but I’m starving’ like you know who, so it’s time to let the cutting begin!
I cut one in half and picked it up and ate it with my hand, caveman style!
It is so tasty and delicious! The filling is creamy, rich and has the savory buffalo taste as well and it is so flavorful!
The biscuit is flaky and this is a wonderful little pot pie! I forgot to take a picture of the broccoli Cole Slaw but it was crunchy and cool and the perfect side dish for this meal!
For dessert I got a little tub of Ben & Jerry’s Americone Dream ice cream. At first I thought that was Al Franken on the tub but upon a closer look I realized it was Stephen Colbert. I let it sit out and it got all melted, creamy and rich! A sweet treat to end this fabulous meal!
