EatandEvolve is a unique restaurant located in Junction City. I realized the other day that I haven’t been there in a couple years, so I decided to fix that today. That’s our luncheon destination and we have a mystery guest joining us today!

Here we are at EatandEvolve in Junction City. They’ve been in operation since 2016, hard to believe it’s been seven years!
Let’s head inside and start this week’s luncheon adventure!
You order up at the front counter and the menu is on the wall behind it.
It’s loaded with tasty options and there’s Kamal who took our order. He told me that Gabriela who owns EatandEvolve has moved to California and is still the owner, but he’s managing it now and is the head chef of this operation.

Our special mystery luncheon guest star who’s hiding behind her two hands there, but we’ll soon see that it’s none other than…
My friend Tricia, who’s been featured on the blog many times in the past. And if you remember Tricia from past posts, you’ll remember she has a brand new book she’s written and gotten published called, “Running Blind in Traffic.”

She’s continuing this media blitz by appearing on Good Day Central Illinois a little after 8AM tomorrow morning, so tune in to WYZZ to see Tricia interviewed on that popular local Central Illinois morning TV show!
And the other big news is that she’s going to be at a book signing event this Saturday at the local Barnes and Noble bookstore from 2 to 4PM signing books and you can meet her and get a book signed in person at this fun event! Stop by and meet Tricia, you’ll be glad you did!
Tricia has done a great job of publicizing her first book that was published at the end of last year.
She’s also go it into the aforementioned, Barnes & Noble and also at, I Know You Like A Book, Lit. On Fire and Moon Dancer Boutique. You can also buy it online at Amazon and Lulu Books.
This is a very interesting book about Tricia’s journey through life that took her from Woodstock, New York to Pekin, Illinois!
It’s an entertaining and captivating look at one person’s interesting and lively journey through life!
The kitchen at EatandEvolve is located behind this window and when Kamal saw me taking a picture of it he invited me back behind the window for a photo of the kitchen in full working order!
There’s a bar against the back wall where customers can sit and enjoy their food and check out the fancy water display. Nice!

Our lunch has arrived and the food looks amazing!
Tricia got the Caramel Apple Crepes with crispy bacon on top. Wow, that looks like a sweet and savory treat!
My lunch started out with an order of this tasty fruit salad.
And for the main course I got the Chicken Pesto Crepes and they were simply delicious! The crepes were thin and stuffed with delicious chicken and topped off with a tasty and savory pesto sauce.
What a delicious lunch and thanks to Tricia for joining me for it. Don’t forget to see her on Good Day Central Illinois tomorrow a little after 8AM and go and meet her at her book signing at the local Barnes & Noble bookstore this Saturday from 2 to 4PM!
