We’re headed off on a mini road trip to Groveland for week number three of this saucy rib journey…did I just say, saucy?
I think that’s the cue for this tour’s theme song to kick off this post! Let’s Tap into week number three…hit it Spinal Tap!
Our driver for this mini road trip is my friend, Virgil Hargrove, who’s been a guest star on the blog in the past and it’s always great to see him and catch up on things.
Virgil owns and operates the business, Medical Resources Group Limited. It’s a specialty medical distribution company that specializes in surgery, cardiology, sterile processing and they have a special interest in surgery of the hand.
He’s run this business for over 25 years and they operate in Morton. Some of his work associates are meeting us for this barbecue lunch and we’ll be meeting all of them shortly!

Here we are at 4 Corner’s Smokehouse in East Peoria. That window says it all, “Time For BBQ!”
Sounds good to me and there’s Virgil leading the way in.
We walked in and quickly found our table of guest stars and Virgil’s work associates!
Let’s introduce this group of smiling faces!

Wonderful to meet all of them and now on to lunch!
We checked out the menu and decided on what to order.
You have to order up at the front counter and a line was quickly formed! We’re not messing around over here!
Here’s the owner and Executive Chef at 4 Corner’s Smokehouse, Henry.
Henry’s been smoking meats and barbecuing for over 25 years, so he knows what he’s doing back there in the kitchen. You can hear an interview with him and check out more of 4 Corner’s Smokehouse on this edition of “You Gotta Eat.”
After we ordered I wandered around and took some photos in here.

Meanwhile, back at our table…
Our BBQ meals have been delivered!
From the top: Nick had the Brisket Melt Sandwich, Chris had the cheesy Mac Attack Sandwich, Britney ordered the Smoked Turkey Sandwich and Virgil also got the Smoked Turkey Sandwich. Everyone got seasoned French Fries, except Virgil who got the Fried Okra for a side dish.
Everyone loved the tangy bbq food and gave the restaurant high praise for the delicious offerings and the friendly and fast service.
Now on to the star of the show: I got a half slab of their St. Louis Ribs and a side of the Seasoned Fries.
I have to say, these are some of the best French Fries I’ve ever had. Sometimes the fries are kind of served as an after-thought, but not here. These are shoestring fries, very crispy and seasoned with a somewhat addictive and spicy bbq seasoning and they are so delicious!
We’re off to a fantastic start!
And now, on to the aforementioned star of this show: A half slab of St. Louis ribs!
I tried one rib without adding any extra sauce and it was tender, juicy and packed with zingy bbq smoky flavor! A fabulous rib!
Then I added some sauce and it took it to a flavor level that made my tastebuds dance with delight!
The sauce added a nice tang with an underlying smoky sweetness to it.
These were fantastic ribs and you should definitely check out 3 Corner’s Smokehouse and try the smoky, tangy and delicious ribs and these other barbecue styled dishes!
These were fabulous, smoky, juicy, tender and flavorful ribs and I’ll give them a high rating of 10.5 out of the Spinal Tap 11!
