We’re overdue for a grilling post. We’ve had a few Fridays that got filled up with other things but this week, it’s back to the grill we go!
Okay, are you ready? Then, let’s cook!
Here’s the ingredients for today’s dish, from left: Kaukauna Smoky Cheddar Cheese, Ray’s Coney Dog Sauce, a baked potato, Kaukauna Sharp Cheddar Cheese and in the back, a pack of thick-sliced bacon.
First we’ll prep the potato by spraying it with Pam Butter Spray (yeah, I know real butter would’ve been better, but I forgot to get it at the store and I was too lazy to go back) and poke some holes in it, like you’re a Manson Family member meeting Sharon Tate.
I seasoned the outside of the potato with salt, black pepper and red pepper for a little zing and zang!
Then I put the potato in a pre-heated 450 degree oven and it’ll be as baked as Jeff Spicoli in about an hour. Oh…gnarly!
Now we’ll pre-heat the grill. We’re going to cook the bacon on here and I’m going to turn it up to 450 degrees, the hottest the grill gets.
Now we’re going to make the chili-cheese sauce by adding the cheddar cheese and seasoning it with hot sauce, black pepper and onion salt.
Once that’s nice and melted and seasoned to perfection we dump in the Ray’s Coney Dog Sauce and voilà! Instant chili-cheese sauce!
While the potato bakes and the chili-cheese sauce simmers, we’ll put the bacon on the grill and let it cook up.
The grill is red hot, so it shouldn’t take long.
The baked potato is baked as this famous comedy duo!
We’ll take it out and let it rest for a few minutes.
I was disappointed in the grilled bacon! It didn’t cook evenly, it’s not crisp and part of it didn’t really cook all the way, even thought the grill was set to the highest temperature.
I decided to improvise and throw it in this skillet and it cooked and got crispy in a manner of minutes.
Okay, here we go, time to build the potato!
The crispy bacon goes on first and then we’ll pour this creamy river of chili-cheese sauce on top of it.
Holy screaming shitballs is this a tasty-ass baked potato!
The chili-cheese sauce is rich and tasty and the savory and smoky bacon compliments it perfectly. The baked potato is a nice base and even though it wasn’t a thoroughly grilled dish, it was a delightful lunch taste sensation!
