We wrapped up the MBIP Corn Dog Tour right before we took the month of February off and now it’s time to start a brand new food tour. This time I chose Macaroni and Cheese to be the star of this tour. We’re starting it this week and it’ll go into June until the first week of summer. Hence the “Spring Into Summer” part of the title.
I’m guessing this will be around a 12 to 15 week tour eating Macaroni and Cheese once a week. Things could be a lot worse!
Okay, let’s start this cheesy-ass tour!

The MBIP Mac and Cheese Tour - Week Number One @: The Publik House
I’m starting this tour at The Publik House which serves up my favorite mac and cheese in and around Peoria. It’s simply the best I’ve ever had and I thought it would be nice to start this tour at the top and see if I can find any place to beat this extraordinary Macaroni and Cheese!
Let’s go in and start our first week of this brand new food tour!
I’m dining alone tonight so I think I’ll grab a seat at the bar, I see a seat down at the end that looks perfect!
I took a seat down here at the end of the bar and here’s my view. Welcome to my world!
Monika (far left), was the bartender on duty and she called over three of her co-workers to pose in this behind the bar photo! From left: Monika, Corri, Savannah and Alysa.
What a pretty and friendly crew! Great to meet all of them! Monika took my order, so now I’ll take some photos while the dinner is being prepared!
There’s a shot of the back of the bar and the dancing mermaids on top of it. There’s dining tables opposite the bar and comfortable booths line the far wall.
There’s the original owner, legendary Peoria bar owner, Mike “Sully” Sullivan. Sully was the original owner until 2010, when Travis and Alyssa Goff bought it from him in 2010 and renamed it The Publik House. I knew Sully and I love this tribute to him!
I love the wooden Guiness cover for the beer taps in here!
It says that the mac and cheese are “award winning” on the menu and I asked Monika about that and she pointed me to this award on the wall. Wow, the mac and cheese won best appetizer last year at the 2023 Taste Of The Heights!
We’ll see if it lives up to this award soon!
It looks like it’s just about time for some food to be delivered to my spot here at the bar!
I’m here on a Wednesday night and it’s Wednesday Wing and Wine night. I’m not a big wine drinker, but I did try the Teriyaki Wings and they were very tasty and delicious.
And now, time for the star of tonight’s show!

This Week’s Mac and Cheese from The Publik House!
As I noted before, I’ve had their Mac and Cheese and it is the best I’ve ever had anywhere! They have a large and small order and this is the small order! Two can easily split the large order!
The Mac and Cheese is topped off with a layer of crushed and toasted Ritz crackers. Let’s dig in to this masterpiece Mac and Cheese!
Just look at this fantastic Mac and Cheese! They use elbow macaroni and it’s swimming in a melted cheese sauce with large chunks of smoky bacon and topped off with smoked cheddar cheese and the Ritz crackers!
It looks simply amazing, let’s take a bite!
This is definitely award winning Mac and Cheese. I’ll have more of a description in the rating section below, but if you’ve never tried this Mac and Cheese, run, don’t walk, to The Publik House and give it a try tonight!
As I was leaving I ran into the Keith Cotton party! Keith introduced me, but I didn’t write their names down, so you’ll have to guess!
Keith is one of the areas most talented photographers and you can check out his website here: Keith Cotton Photography.
They were celebrating the opening of his new “COLLECTED” exhibition at The Noble Center. Stay tuned for a post on that exhibition soon here on MBIP!

Macaroni and Cheese Rating For Week Number One At The Publik House
This is truly Macaroni and Cheese at it’s ultimate best! I’ve never had Mac and Cheese this tasty and delicious.
The elbow macaroni swims in a rich cheese sauce with chunks of smoky bacon. It’s topped off with smoked cheddar cheese and toasted, buttery crumbled Ritz crackers which adds a nice crunch to the creamy consistency.
I don’t know if we can find any mac and cheese as good or even better!
The Mac and Cheese gets a rare four box rating on our first week! Can anyone match or even top this fantastic Macaroni and Cheese master presentation? Time will tell, stay tuned!
